Loic is our resident forager (and the person to corner for cocktail bar recommendations). With the news that he’ll soon have a whole garden of herbs to play around with, he’s started working on a new cocktail menu. It is inspired by our Arts and Crafty William Morris and will include things like a nettle vesper martini and wagyu beef fat infused Glenfiddich IPA with truffle honey… you’ve got to try it to believe it.
But until these are launched, Loic’s leaving us with one of his favourite honey cocktail recipes: The Bumble.
40ml Stratford gin
1 tsp Berkswell honey
40ml hibiscus & rosemary tea
1/2 lemon juice
1/2 egg white
Method: shake over ice, strain, garnish with bright edible flowers.
