If you’ve always wanted to know how to perfect your sourdough, our head baker Min hosts the Bread School. Join her for a day workshop.
Our bakery specialises in stoneground UK grown grains. Whilst our head baker Min starts at 4am to bake every day, her real works starts even earlier than that. You’ll find Min searching across the fields of the land, visiting UK farms with a regenerative and organic ethos to bring the distinctive flavour that her bread carries.
All our baked goods and pastries are made from this meticulously sourced grain. You’ll notice that we bake dark – this brings a wonderful caramelised taste to our bread whilst lending a balancing savouriness to our sweets.
Having grown up as the daughter of dairy farmers, Min has a discerning palate for dairy. Her familiarity with all things milk led into a career as an artisan cheese buyer before she became a baker. Butter, milk and yoghurt all hold pride of place in our bakery fridges for when you are picking up your essentials for the weekend. For what is bread without butter?
We’ve two hives in our walled garden and you’ll find a limited batch of honey on the shelves every autumn. Our beekeeper Sarah looks after several hives in our village so when ours has run out, the village honey and honeycomb from Sarah’s bees will be on the shelves too.
We’re a mini-outpost for Birmingham’s natural wine bar, Wine Freedom. Wine Freedom’s founder, Sam Olive, was our former wine director and is the person who made us fall in love with wine in a whole new way. Wine Freedom specialise in wine from sensitively farmed vineyards, made with no chemicals. They talk about wine in a language you understand and it’s our go-to night out in Birmingham city!
Along side our bread, wine, honey and dairy, we also have larder essentials such as tea, coffee, single estate chocolate, cured meats and sensitively farmed grains and pulses. Soon, we’ll have a wider range of larder products straight from the hands of our Michelin-starred chefs – ferments, pickles, potted pork and other grab-worthy jars that will help you throw together a last minute meal or snack plate.
Min Go is our head baker. After growing up on a dairy farm in Korea, she decided to choose a career that was easier than her parents….so ended up in baking where she has to wake up at 4am every day! Min studied in the School of Artisan Food in Nottinghamshire where she developed a fascination with ancient grains. She went onto become one of the lead bakers at Meyers Bageri in Copenhagen, the bakery collection started by Claus Meyers, the man behind the set-up of Noma. But Min had already fallen in love with a little brick building in Hampton in Arden on the doorstep of a walled garden. And so she returned to England in 2021 to start her first bakery.
One of Min’s gifts is building relationships with people and she has scoured the land for the grains and mills she works with.
