Little Black Book: Ben The Cakeman

As much an artist as a baker, Ben is an International Cake Show judge, as well as an award-winning chef. When he’s not creating multi-tiered show-stoppers, Ben leads workshops, particularly on the art of sugar work — a gift of his. A regular on the estate, in the hands of Ben everything is possible.

Ben, how did you fall in love with the art of cake making?

I’ve always been fascinated by the alchemy of cooking: taking raw ingredients and creating something from them. But baking with my Nan at weekends is probably where my love for creating really began. Fast forward to my time at working at The Lanesborough and that is where my passion for creating the detailed sugar-work I’m now know for really ignited. The standards in that kitchen were beyond anything I had ever seen before and made me realise what could be possible.

Can you tell us about a recent wedding that felt particularly special?

All of the weddings I get to be involved with feel special — it’s such a big day to share with the couples I work with. But a few recent examples include a commission from a South African bride, who wanted to use her wedding bouquet as a starting point. From there she gave me completely free rein to be as creative as possible, which is where I excel. The result was a seriously elegant cake, with 60, hand-crafted, show-stopping South African flowers! A labour of love with plenty of impact.

After it’s all over, what’s the feedback you’re happiest to receive?

My mantra has always been “exceed all expectations” and it makes me happy to report that this is the most common feedback I receive. I was also delighted to hear from the Earl and Countess of Yarmouth, who told me what a pleasure it had been to walk into their wedding reception together as husband and wife and “see your work or art for the first time”. It’s wonderful to have all the hours of work and dedication recognised and appreciated.

Finally, you’ve worked on a huge number of weddings. What advice would you give couples who are looking for a cake maker?

Don’t worry about finding the ‘right’ cake immediately — fashions change and plans evolve. Focus on finding a cake-maker whose work you love. Then trust them to design a piece which is perfect for your special day and reflects your vision.
