ROMI’S TOP SECRET COOKIES

If you’ve been to Hampton Manor, chances are you’ve tried Romi’s cookies. They sit (in their gooey-centered, freshly-baked goodness) alongside every latte, re-fuel every meeting with a sugary-boost, and await midnight munchies in each bedroom’s cookie jars. Yes, these cookies have become a staple of Hampton Manor life (to the dismay of the team’s waistlines!).

For 10 years Rom’s kept the recipe for these cookies a guarded secret, rustling them up in the early hours to keep thieving hands at bay. Today, I did the impossible. I coaxed Rom into sharing his recipe. My work is done. I would say you could thank me later, but I already have everything I could ever wish for in the form of these moorish Triple Chocolate Cookies that I munch my way through as I write this.

Ingredients

150g soft butter
180g soft light brown sugar
50g caster sugar
pinch of salt
1 egg
1/4 tsp vanilla
8g cocoa powder
3g bicarb
3g baking powder
266g plain flower
83g dark chocolate chips
83g white chocolate chips

Method 

Turn the oven up to 180 degrees. Mix sugars, butter, and salt until light and fluffy. Add the egg and vanilla. In a separate bowl stir the dry ingredients minus the chocolate chips. Add to the butter mixture, then finally fold in the chocolate chips. Bake for 6 minutes. Eat immediately (you won’t be able to wait!).
